I have the same mac and I was facing a similar issue only on Windows 10.

When I would connect my USB-C adapter, my mac's WiFi was getting disconnected.
After a lot of experimentation and research online and speaking to the customer service team of the manufacturer of the USB-C adapter, I accidentally or sub-consciously reversed the USB-C adapter's cable and inserted in and found a solution!

I re-experimented with this technique a couple of times and saw that it worked fine and my WiFi was not getting disconnected. You can try this out and see if it works with each one of your USB-C ports on your mac.
However, I didn't find any issues on macOS Sierra.
Also, I saw some Youtube videos of circuit board repairing and noticed that some of the cheaper priced multi-port adapters $30-$40 only have this issue. The higher end ones costing $80-$100 multi-port adapters didn't seem to give any problems as per the presenter's footage.
You can try out these options to see if your problem gets resolved. There's no guarantee I guess.
